are a supplier that I have used in the past. There name comes from a particular breed of sheep. However, they don't specialise in lamb as you might expect.

What I know Ben Weatherall for is his superb mutton. Mutton has become a difficult meat to source in the UK and I am sure that many people don't even know what it is.

Mutton is simplistically classed as coming from a sheep that is over 2 years old. It is not as tender as lamb and really must be cooked slower to tenderise. It is much more intense in flavour having gamier notes and makes wonderful casseroles or roasted over root vegetables that take on the delicious flavours as the roast releases its delicious fats and juices.

I don't really know why mutton moved out of favour, but is good to see that HRH Prince of Wales is extolling its virtues.

Lamb does have its place, but think of veal and beef and you also have lamb and mutton reflecting the aging of the beast and being two different products.

The Weatherall Clan have a great range of produce including dry aged Galloway beef that went a long way through the Great British Menu run as well as supplying Iron-age Pig..... a cross between a Tamworth sow and a wild boar.
