    The Global G Series of knives have a longer blade and weighted hollow handles. They are perfect fo rgeneral preparation and are often used by the more adventurous chef.

    Global knives are renowned worldwide for their sharpness and balance. Like many western knives, both sides of the blade are ground for sharpness, but the real difference is that Global knives are sharpened to a steep point and an acute angle, unlike western knives which use a bevelled edge . This ensures that not only is the knife is extremely sharp but also retains it's sharpness for longer. Furthermore, the edge on a Global knife is so large and prominent that it is easily seen with the naked eye and extends a quarter of an inch or more up from the tip of the knife.

    To balance their knives, Global uses a hollow handle which is then filled with just the right amount of sand to create the correct balance. Global uses this method rather than using a full tang and a bolster to balance their knives for two reasons. First, it is far more precise than using a tang and a bolster. Second, Asian knives typically do not have bolsters, since they only serve as a hindrance to cutting and sharpening.

    The first Global knives were designed in 1985 by Komin Yamada whose remit was to develop a range of knives which was truly new and revolutionary, harnessing the best materials available and the most modern design concepts. With an almost unlimited budget he was to fathom a series of kitchen knives which would appeal to the professional and amateur chef alike, be comfortable and easy to handle, and meet their most demanding requirements.

    To acheive this end, Global knives are made from the finest stainless steel material. The blades utilise CROMOVA 18 stainless steel which is ice tempered and hardened to hold a razor sharp edge, and is superb in resisting rust, stains and corrosion.

    Like the Samurai swords before them, each knife is carefully weighted to ensure perfect balance in the hand. The smooth contours and seamless construction eliminate food and dirt traps, offering the ultimate in safety and hygiene. We belive Komin Yamada fulfilled his remit.
