Cheese is a food made from coagulated milk, usually the milk of cows, buffalo, goats, or sheep. It sounds revolting, but comes in different strengths and flavours and typically a cheese will be found to suit any taste.
Cheese is not always vegetarian unless the coagulation occurs without animal products (typically animal rennet) and can be produced with a substitute (e.g. acetic acid or vinegar) to cause the coagulation creating "curds and whey" ... the cheese base and a liquid by-product.[
Some cheeses also have moulds, either on the outer rind (similar to a fruit peel) or throughout .. these are often introduced manually by injection, although some of the more famous cheeses are produced in environments that introduce the moulds (e.g. Roquefort).
Hundreds of types of cheese are available and their different styles, textures and flavors depend on the origin of the milk (including the animal's diet);also whether it has been pasteurized, butterfat content, the species of bacteria and mould, and the processing including the length of aging.
Herbs, spices, or wood smoke may be used as flavoring agents. The yellow to red color of many cheeses is a result of adding annatto and is an unnatural colouring.
An interesting, but recent development is that wedding cake is being displaced by more savoury palates in favour of cheese tiers rather than wedding cake tiers.

Its period of ageing may be approximately 4 years. All the grapes are from vineyards owned by Gonzalez Byass in the Jerez Superior area. Consume preferably within a year. Serve cool, but not cold, 16 degrees C. Serve in a half full sherry glass to appreciate its deep fragance and intense aroma. Peter Lehmann - Botrytised Semillon 2008 37.5cl Bottle Wine The Barossa is an ideal region for late harvest style white wines given the quality of Semillon in the region and the warm weather conditions that continue well into late vintage. Chief Winemaker Andrew Wigan had the good fortune of winning a trip to visit France in 1982 at vintage time and enjoyed a rare opportunity of spending time in the vineyards at Chateau d’Yquem – unquestionably then, and still today, home to the greatest sweet white table wine in the world. Walking through the vineyards he could see the same deterioration in the grapes that he had seen in the fruit being received at our own winery back in the Barossa! What he had assumed to be common spoilage in extremely ripe Semillon in fact was Noble Rot - Botrytis Cinerea. Andrew returned armed with the confidence that what we were experiencing in our vineyards in the Barossa was identical to what he’d seen in Sauternes. He was determined to master Noble Rot and create Peter Lehmann Wines own expression of Botrytis Semillon. 25 years on from that moment of inspiration in the vineyards of Chateau d’Yquem, we are convinced our Botrytis Semillon is a Barossa classic. A beautiful bright gold colour which will deepen with bottle age. It has wonderful tropical fruits aroma with just a hint of citrus. It is a truly harmonious wine with a delicious lusciousness on the middle palate counterbalanced by tantalisingly complex acidity, the hallmark of a botrytised wine. 2008 vintage began early with a small burst of heat. This was followed by ideal vintage weather: mild to warm days and cool to cold nights. The grapes were picked on the 13th May 2008. Enjoy with creamy blue vein or washed rind cheeses. Planeta - La Segreta Rosso Igt 2008 75cl Bottle Wine Inspired by a pink Sicilian sunset, this wine has a light and attractive nose with notes of rose petals, pomegranate and strawberries. On the palate, the wine is silky smooth, light and fresh with no angularity and a beautiful finish. This wine has few limits: excellent as aperitif, with light pasta dishes or even with fruit, fillet of grouper with tomatoes, spaghetti alla Norma, warm octopus and potato salad, pasta with fresh tuna and courgettes, sea-food, oysters, raw sword fish and sushi, salami made with black Nebrodi pork, fresh hard 'tuma' cheese. The Syrah grapes come from the Planeta family's Dispensa winery and are harvested slightly earlier than usual. The grapes are destemmed and soft crushed after 4-5 hours of maceration in the press; the juice is clarified through cold settling overnight and then inoculated with selected pure yeast. Langlois-chateau - Cabernet De Saumur La Bretonniere Rose Sec 2007 75cl Bottle Wine From the vineyards in Coudray-Macouard, the Cabernet Franc is planted on chalky-clay soil. The harvest yielded 60 hl/ha and was fully destemmed before a gentle pressing. Maceration was undertaken for 12 to 24 hours to obtain colour and body before fermentation at controlled temperatures to preserve the fresh fruit aromas. Filtration was through kieselguhr (a naturally occurring, soft, chalk-like sedimentary rock that is easily crumbled into a fine white to off-white powder), and the wine was cooled before bottling to avoid the formation of tartaric crystals. Exceptionally summery dry rose made wholly from selected Cabernet Franc vines. Offers a wealth of raspberry fruit and a fresh, leafy character.
