The pale salmon colour is achieved by the addition of still red pinot noir wine to a blend of still wines made from pinot noir and chardonnay. The pinot noir wine must be of exceptional quality. The inclusion of chardonnay is important to the character of Dom Perignon Rose, a vital ingredient in producing a wine of perfect balance. The two grapes together offer harmony and complexity which is less likely to be achieved in Champagne by either grape on its own. Dom Perignon Roses remain a rare commodity due to the small quantities available from each vintage year.

Brut Premier non-vintage is the embodiment of Louis Roederer style, combining all the fruitiness and freshness of youth with the vinosity of a fully mature wine. This is a structured and elegantly mature wine, with a lively attack and a smooth palate. The blend is 1/3 Chardonnay and 2/3 Pinots, including 10% of reserve wines aged in oak casks for 2-5 years. The maturation is an average of three years ageing on lees, plus another six months after dsgorging. A pale golden colour, delicate with a persistent beading. Rich yet subtle bouquet with hints of hawthorn, almonds andtoast. Clean attack, creamy structure. Brut Premier is excellent as an apperitif but also readily accompanies light entrees based on fish or shellfish.

With tantalising complexity, almost cryptic, this is the oldest natural cask strength release from the original Dufftown distillery. Its rich complexity is the makers 'signature' and it was matured in closely matched refill American Oak casks, filled in 1971. There are approximately 2,160 numbered bottles worldwide and it is presented in a special hand-finished bottle. The complexity of Mortlach disguises many tastes. These range from spice notes and vanilla, a light malty sweetness, then smoky dryness.
